Lemon Drizzle Loaf


240g unsalted butter

240g cater sugar

240g self raising flour

4 large eggs

Zest of 2 lemons

75ml lemon juice

75g caster sugar


Step 1 - Preheat the oven to 160'C (fan oven).

Step 2 - Grease and line a rectangular, loaf tin.

Step 3 - In a bowl, beat together the butter and the caster sugar until the mixture is pale and creamy.

Step 4 - Add in the flour, eggs and lemon zest. Beat into the mixture until well combined.

Step 5 - Pour the mixture into the prepared loaf tin and place in the centre of the oven. Set a timer for 50 minutes.

Step 6 - While the loaf is baking, you can make the drizzle. To do this, combine the lemon juice and caster sugar into a bowl.

Step 7 - Remove the cake from the oven. While still in the tin, use a fork to prick holes in the top of the cake. Pour the drizzle mixture over the cake and leave in the tin to cool. 

Step 8 - Remove the cake from the tin and enjoy! Baba Chef Jack recommends serving this with a generous amount of ice cream - yummy!
